Asian Beef Tacos

You probably recall that last year I won 3rd place in the I’m A Saucy Mama recipe contest with my Cream Cheese & Buffalo Chicken Wontons.  (Which, by the way, only required four ingredients!) 

Guess what?  I’m beyond excited to tell you that I was invited to compete in the Saucy Mama Fabulous With Five Recipe Contest!! 
This year, the rules are a bit different!  We were only allowed to use five ingredients total.  (OK, they did give us a few freebies…salt, pepper and oil.)

Last year I submitted several recipes, but this year I went with two.  I’m going to share my first recipe in which I used the Saucy Mama Pacific Rim Ginger Dressing.  To set myself apart, I “puffed” my taco shells in oil which gives them a perfectly chewy texture that combines great with the spicy beef and cool, crispy cabbage! 

 

Asian Beef Tacos


5 small chuck tender steaks*
1/4 cup Saucy Mama Pacific Rim Ginger Dressing, plus 1 Tbsp.
cabbage, thinly shredded. (Approx. 1/4 small head of cabbage)
1/4 c. red onion, small dice

4 8 inch flour tortillas
salt/pepper

*Feel free to substitute your choice of beef as long as it’s a tender cut.

Lightly salt and pepper steaks and marinade with 1/4 cup Saucy Mama Pacific Rim Ginger Dressing in a ziploc bag for 30 minutes. Thinly slice cabbage and set aside. Chop red onion into a small dice, set aside. Grill steaks over medium-high heat for 4 minutes on each side. Let them sit for 5 minutes.
As the meat rests, add 1/2 cup oil to a saute pan on medium heat. As soon as the oil gets hot, add a tortilla to the oil and once it puffs up, turn it over and repeat. Tortilla should be a light golden color with a bubbled texture. Place it on a paper towel and fold in half. Repeat process with the next three tortillas.
Chop meat into a medium dice and add it into a hot saute pan with cabbage, red onion and a tbsp. of the Pacific Rim Ginger Dressing. Cook for one minute until warm. Add a handful of cabbage to the bottom of each puffy tortilla and place 1/4 of the meat mixture on top of it.
Serves 2
