Ingredients
- 700 g beef chuck, cubed
- 4 tbsp massaman curry paste
- 2 cans coconut milk
- 3 potatoes, chunked
- 1 onion, wedged
- 1/2 cup roasted peanuts
- 2 tbsp fish sauce
- 2 tbsp brown sugar
Instructions
- Fry the massaman curry paste in a little coconut milk until fragrant.
- Add the beef and brown it in the paste.
- Pour in the rest of the coconut milk and bring to a simmer.
- Add the potatoes, onion, fish sauce, and brown sugar.
- Simmer gently for 45 minutes until the beef is fork-tender.
- Stir in the peanuts, adjust the seasoning, and serve over jasmine rice.
