Massaman Curry

Massaman curry is a rich, mild Thai curry with tender beef, potatoes, and peanuts in a fragrant coconut sauce. Warm spices like cinnamon and cardamom give it a uniquely cozy, aromatic depth. It is comforting and luxurious, perfect spooned over jasmine rice.

Ingredients

  • 700 g beef chuck, cubed
  • 4 tbsp massaman curry paste
  • 2 cans coconut milk
  • 3 potatoes, chunked
  • 1 onion, wedged
  • 1/2 cup roasted peanuts
  • 2 tbsp fish sauce
  • 2 tbsp brown sugar

Instructions

  1. Fry the massaman curry paste in a little coconut milk until fragrant.
  2. Add the beef and brown it in the paste.
  3. Pour in the rest of the coconut milk and bring to a simmer.
  4. Add the potatoes, onion, fish sauce, and brown sugar.
  5. Simmer gently for 45 minutes until the beef is fork-tender.
  6. Stir in the peanuts, adjust the seasoning, and serve over jasmine rice.
