Aloo Gobi

Aloo gobi is a classic Indian dry curry of potatoes and cauliflower cooked with turmeric, cumin, and aromatic spices. The vegetables turn tender and golden, coated in a fragrant, lightly spiced masala. It is a comforting, naturally vegan dish that pairs perfectly with naan or rice.

Ingredients

  • 3 potatoes, cubed
  • 1 head cauliflower, florets
  • 1 onion, diced
  • 1 tomato, diced
  • 1 tsp turmeric
  • 1 tsp cumin seeds
  • 1 tsp garam masala
  • 1 tbsp ginger garlic paste

Instructions

  1. Heat oil and crackle the cumin seeds, then saute the onion until soft.
  2. Add the ginger garlic paste and tomato and cook until softened.
  3. Stir in the turmeric, garam masala, and salt.
  4. Add the potatoes and cauliflower and toss to coat in the spices.
  5. Cover and cook 10 minutes, then uncover and cook until tender and lightly browned.
  6. Garnish with cilantro and serve with naan or rice.

💡 Chef's tip

Cut the potatoes and cauliflower to a similar size so they cook through at the same rate.

Cooking the dish mostly uncovered keeps it a dry curry, letting the moisture evaporate so the potatoes and cauliflower roast and brown rather than stew into mush.
