Aloo Gobi
Aloo gobi is a classic Indian dry curry of potatoes and cauliflower cooked with turmeric, cumin, and aromatic spices. The vegetables turn tender and golden, coated in a fragrant, lightly spiced masala. It is a comforting, naturally vegan dish that pairs perfectly with naan or rice.

- Add the potatoes and cauliflower and toss to coat in the spices.
- Cover and cook 10 minutes, then uncover and cook until tender and lightly browned.
- Garnish with cilantro and serve with naan or rice.
💡 Chef's tip
Cut the potatoes and cauliflower to a similar size so they cook through at the same rate.
Cooking the dish mostly uncovered keeps it a dry curry, letting the moisture evaporate so the potatoes and cauliflower roast and brown rather than stew into mush.
