Chicken Marsala

Chicken Marsala features golden pan-seared chicken in a rich, glossy mushroom and Marsala wine sauce. The sweet, nutty wine reduces into a deeply savory sauce that coats every bite. It is an elegant dinner that comes together in about 35 minutes in one pan.

Ingredients

  • 4 chicken breasts, halved thin
  • 1/2 cup flour
  • 300 g mushrooms, sliced
  • 3/4 cup Marsala wine
  • 3/4 cup chicken broth
  • 3 tbsp butter
  • 3 cloves garlic, minced

Instructions

  1. Pound and halve the chicken into thin cutlets, then dredge in seasoned flour.
  2. Sear the chicken in butter and oil until golden, then set aside.
  3. Saute the mushrooms in the same pan until browned.
  4. Add the garlic, then pour in the Marsala and simmer until reduced by half.
  5. Add the broth and a knob of butter and simmer into a glossy sauce.
  6. Return the chicken, simmer 5 minutes to finish, and serve.
