Beef Stroganoff

Beef stroganoff is a creamy, savory dish of tender beef and mushrooms in a sour cream sauce over egg noodles. The rich, tangy sauce makes it the ultimate weeknight comfort food. It comes together in about 35 minutes in a single pan.

Ingredients

  • 600 g beef sirloin, sliced thin
  • 300 g mushrooms, sliced
  • 1 onion, sliced
  • 1.5 cups beef broth
  • 3/4 cup sour cream
  • 2 tbsp flour
  • 3 tbsp butter
  • to serve egg noodles

Instructions

  1. Sear the sliced beef in butter over high heat until just browned, then set aside.
  2. Saute the onion and mushrooms until golden.
  3. Sprinkle in the flour and cook for 1 minute.
  4. Slowly whisk in the broth and simmer until thickened.
  5. Return the beef, then take the pan off the heat and stir in the sour cream.
  6. Serve over cooked egg noodles with parsley.

💡 Chef's tip

Sear the beef quickly over high heat and remove it; overcooking at this stage makes the strips tough before they ever reach the sauce.

Stirring the sour cream in off the heat at the very end keeps it from curdling, giving the sauce its signature smooth, tangy creaminess.
