Hearty Lentil Soup

A thick, nourishing lentil soup that is cheap, filling and packed with plant protein - comfort in a bowl.

Ingredients

  • 300 g brown lentils
  • 2 carrots
  • 1 onion
  • 400 g diced tomatoes
  • 1.2 L vegetable broth

Instructions

  1. Saute onion, carrot and celery until soft.
  2. Add lentils, tomatoes and broth.
  3. Simmer 30 minutes until lentils are tender.
  4. Season, then finish with a splash of lemon.

💡 Chef's tip

Do not salt the lentils until they are tender - salting early can keep them firm and slow to cook.

A splash of vinegar or lemon stirred in at the end brightens the earthy lentils and makes the whole pot taste more vivid and balanced.
