No-Cook Hummus

Silky-smooth homemade hummus in 5 minutes - creamier and cheaper than store-bought, no cooking required.

Ingredients

  • 1 can canned chickpeas
  • 3 tbsp tahini
  • 2 tbsp lemon juice
  • 1 clove garlic
  • 2 tbsp olive oil

Instructions

  1. Blend tahini and lemon juice until pale and fluffy.
  2. Add chickpeas, garlic and a little of their liquid.
  3. Blend until silky, loosening with more liquid as needed.
  4. Drizzle with olive oil and serve.

💡 Chef's tip

Add the chickpea liquid (aquafaba) a spoon at a time while blending to reach a cloud-soft texture.

Blending the tahini and lemon juice together first, before adding the chickpeas, emulsifies them into a fluffy base that makes the whole dip lighter and smoother.
