Ingredients
- 700 g chicken thighs, cubed
- 1/2 cup cornstarch
- 3/4 cup orange juice
- 1 tbsp orange zest
- 3 tbsp soy sauce
- 1/4 cup sugar
- 2 tbsp rice vinegar
- 1 tbsp each garlic and ginger
Instructions
- Toss the chicken cubes in cornstarch to coat.
- Fry them in hot oil until golden and crisp, then drain.
- Simmer the orange juice, zest, soy sauce, sugar, vinegar, garlic, and ginger in a pan.
- Thicken the sauce with a little cornstarch slurry until glossy.
- Toss the crispy chicken in the sauce to coat.
- Serve over rice with a sprinkle of sesame seeds and green onion.
💡 Chef's tip
Reduce the orange sauce until it is thick and syrupy before adding the chicken, so it glazes rather than making the coating soggy.
Double-frying or frying the cornstarch-coated chicken until deeply crisp is what lets it stay crunchy even after being tossed in the sauce.
