Orange Chicken

Orange Chicken

Orange chicken is crispy fried chicken tossed in a sweet, tangy, glossy orange sauce, a takeout favorite made at home. The bright citrus sauce clings to every crunchy piece for the perfect sweet-savory bite. It beats delivery and comes together in about 35 minutes.

Ingredients

  • 700 g chicken thighs, cubed
  • 1/2 cup cornstarch
  • 3/4 cup orange juice
  • 1 tbsp orange zest
  • 3 tbsp soy sauce
  • 1/4 cup sugar
  • 2 tbsp rice vinegar
  • 1 tbsp each garlic and ginger

Instructions

  1. Toss the chicken cubes in cornstarch to coat.
  2. Fry them in hot oil until golden and crisp, then drain.
  3. Simmer the orange juice, zest, soy sauce, sugar, vinegar, garlic, and ginger in a pan.
  4. Thicken the sauce with a little cornstarch slurry until glossy.
  5. Toss the crispy chicken in the sauce to coat.
  6. Serve over rice with a sprinkle of sesame seeds and green onion.

💡 Chef's tip

Reduce the orange sauce until it is thick and syrupy before adding the chicken, so it glazes rather than making the coating soggy.

Double-frying or frying the cornstarch-coated chicken until deeply crisp is what lets it stay crunchy even after being tossed in the sauce.
