Tomato Bruschetta

Ingredients

  • 1 baguette
  • 4 ripe tomatoes
  • 2 cloves garlic
  • a handful fresh basil
  • 3 tbsp olive oil

Instructions

  1. Dice the tomatoes and mix with chopped basil, a little olive oil, and salt; let sit 10 minutes.
  2. Slice the baguette and toast or grill until crisp and golden.
  3. Rub each warm slice with a raw garlic clove.
  4. Drizzle the toasts with olive oil.
  5. Spoon the tomato mixture on top just before serving.
  6. Finish with a little more basil and serve at once.

Spoon the tomato topping on only just before serving, since sitting on the bread too long turns the crisp toast soggy.
