Tiramisu
Tiramisu is the classic Italian no-bake dessert of coffee-soaked ladyfingers layered with a cloud of sweet mascarpone cream. It is elegant, make-ahead, and absolutely irresistible. A dusting of cocoa over the top is the finishing flourish.

Ingredients
- 24 ladyfingers
- 400 g mascarpone
- 3 eggs, separated
- 300 ml strong coffee
- to dust cocoa powder
Instructions
- Brew the coffee and let it cool, then pour into a shallow dish.
- Beat the egg yolks with sugar until pale, then fold in the mascarpone until smooth.
- Whip the egg whites to stiff peaks and gently fold them into the mascarpone cream.
- Dip each ladyfinger briefly in the coffee, just a second per side, and lay a layer in a dish.
- Spread half the cream over the ladyfingers.
- Repeat with another layer of dipped ladyfingers and the rest of the cream.
- Cover and chill at least 6 hours or overnight.
- Dust generously with cocoa powder just before serving.
💡 Chef's tip
Make it a day ahead, as tiramisu needs at least six hours chilling for the layers to set and the flavors to come together.
Dipping the ladyfingers in the coffee for only a second per side is crucial, since a long soak turns them to mush and makes the whole dessert collapse.
