Butter Chicken

Mild, buttery and irresistibly creamy - this Indian classic is the one even spice-shy eaters fall for.

Ingredients

  • 700 g chicken thighs
  • 400 g tomato puree
  • 60 g butter
  • 100 ml cream
  • 2 tbsp garam masala

Instructions

  1. Sear spiced chicken until browned; set aside.
  2. Simmer tomato puree with spices, then blend smooth.
  3. Return chicken, stir in cream and simmer 10 minutes.
  4. Swirl in cold butter off the heat and serve with naan.

💡 Chef's tip

Blend the sauce smooth before returning the chicken - that silky texture is the hallmark of a good butter chicken.

Finishing the sauce with cold butter swirled in off the heat (mounting) gives butter chicken its signature glossy richness that simply adding cream cannot.
