Chili Lime Salmon

Flaky salmon with a zesty chili-lime glaze brings bright, bold flavor to a quick weeknight dinner. The sweet heat and citrus cut through the rich fish beautifully. Ready in twenty minutes and naturally low-carb.

Ingredients

  • 2 salmon fillets
  • 2 lime
  • 1 tbsp chili powder
  • 1 tbsp honey
  • 2 cloves garlic

Instructions

  1. Heat the oven to 200C (400F) and line a tray.
  2. Whisk the lime juice, zest, chili powder, honey, and garlic into a glaze.
  3. Pat the salmon dry, season, and brush with half the glaze.
  4. Roast for 8 minutes, then brush with the rest of the glaze.
  5. Roast 4 to 6 minutes more until it just flakes.
  6. Rest 2 minutes, then serve with lime wedges over rice or greens.

💡 Chef's tip

Pull the salmon while the very center is still slightly translucent, since it keeps cooking from residual heat to a perfect moist finish.

Brushing the glaze on in two stages, once before and once partway through cooking, builds layers of flavor and a lightly caramelized finish without burning the sugars.
