Corn Chowder

Corn chowder is a creamy, comforting soup celebrating sweet summer corn with tender potatoes. It is rich and satisfying yet bright with fresh corn flavor. Whether made with fresh or frozen corn, it is an easy one-pot meal for any season.

Ingredients

  • 4 cups corn kernels
  • 3 potatoes, diced
  • 1 onion, diced
  • 4 cups vegetable broth
  • 1 cup milk
  • 3 tbsp butter
  • 2 tbsp flour
  • 2 cloves garlic

Instructions

  1. Melt the butter and saute the onion and garlic until soft.
  2. Stir in the flour and cook for 1 minute.
  3. Add the potatoes, corn, and broth and simmer until the potatoes are tender.
  4. Blend about a third of the chowder and stir it back in for creaminess.
  5. Stir in the milk and warm through without boiling.
  6. Season with salt and pepper and serve.

Blend a portion of the chowder and stir it back in for a creamy base while keeping plenty of whole kernels for texture.
