Creamy Tuscan Chicken

Creamy Tuscan chicken simmers golden seared chicken in a rich garlic cream sauce with sun-dried tomatoes and spinach. It tastes luxurious yet comes together in one pan in half an hour. Serve over pasta, rice, or with crusty bread.

Ingredients

  • 4 chicken breasts
  • 250 ml heavy cream
  • 100 g sun-dried tomatoes
  • 2 cups spinach
  • to taste garlic and parmesan

Instructions

  1. Season the chicken and sear in oil until golden on both sides, then remove.
  2. Cook the garlic and sun-dried tomatoes briefly in the same pan.
  3. Pour in the cream and a little broth and simmer.
  4. Stir in parmesan until the sauce thickens.
  5. Return the chicken and simmer until cooked through.
  6. Stir in the spinach until just wilted.
  7. Serve over pasta or with bread to soak up the sauce.

💡 Chef's tip

Wilt the spinach in at the very end so it stays bright green and does not overcook into a dull mush.

Using a splash of the oil from the sun-dried tomato jar to sear the chicken infuses the whole dish with concentrated tomato flavor from the very first step.
