Ingredients
- 4 chicken breasts
- 250 ml heavy cream
- 100 g sun-dried tomatoes
- 2 cups spinach

Instructions
- Season the chicken and sear in oil until golden on both sides, then remove.
- Cook the garlic and sun-dried tomatoes briefly in the same pan.
- Pour in the cream and a little broth and simmer.
- Stir in parmesan until the sauce thickens.
- Return the chicken and simmer until cooked through.
- Stir in the spinach until just wilted.
- Serve over pasta or with bread to soak up the sauce.

Wilt the spinach in at the very end so it stays bright green and does not overcook into a dull mush.
