Oven Roasted Sweet Potatoes

Caramelized, crispy-edged sweet potato cubes - a naturally sweet, healthy side that goes with everything.

Ingredients

  • 3 sweet potatoes
  • 2 tbsp olive oil
  • 1 tbsp cornstarch
  • 1 tsp paprika
  • 1/2 tsp salt

Instructions

  1. Heat oven to 220C (425F).
  2. Cube the sweet potatoes and toss with oil, cornstarch and spices.
  3. Spread out on a tray with space between.
  4. Roast 25-30 minutes, flipping once, until crisp.

💡 Chef's tip

Give them space on the tray and flip once halfway - crowding steams them soft instead of roasting them crisp.

Tossing the cubes with a little cornstarch along with the oil draws out surface moisture and crisps the edges far more than oil alone.
