Ingredients

  • 1 kg potatoes
  • 5 tbsp mayonnaise
  • 1 tbsp mustard
  • diced celery and onion
  • 2 tbsp vinegar

Instructions

  1. Peel 2 pounds of potatoes and cut them into even bite sized chunks of about 1 inch so they cook uniformly.
  2. Place the potatoes in a pot of cold salted water, bring to a boil, and simmer for 10 to 15 minutes until just fork tender but not falling apart.
  3. Drain the potatoes well and while they are still warm, toss them gently with 2 tablespoons of vinegar so they soak up the tang.
  4. Let the potatoes cool for about 15 minutes so the dressing does not melt or turn oily when added.
  5. In a large bowl, mix half a cup of mayonnaise, 1 tablespoon of mustard, chopped celery, diced onion, salt, and pepper.
  6. Add the cooled potatoes and fold gently until evenly coated, being careful not to mash them.
  7. Cover and refrigerate for at least 1 hour, then taste and adjust the seasoning before serving cold.
