Ratatouille

Ratatouille is a rustic French stew of summer vegetables simmered with garlic and herbs into something far greater than its parts. Naturally vegan and gluten-free, it works as a main over rice or as a side. It tastes wonderful warm or at room temperature.

Ingredients

  • 1 eggplant
  • 2 zucchini
  • 2 bell peppers
  • 4 tomatoes
  • to taste garlic and herbs

Instructions

  1. Cut the eggplant, zucchini, and peppers into even bite-size chunks.
  2. Saute each vegetable separately in olive oil until lightly browned, then set each aside, which keeps their textures distinct.
  3. In the same pan, cook diced onion and garlic until soft, then add the chopped tomatoes and herbs.
  4. Simmer the tomato base for 10 minutes until it thickens into a sauce.
  5. Return all the sauteed vegetables to the pan and stir gently to combine.
  6. Simmer everything together for 15 minutes so the flavors meld.
  7. Season to taste and finish with torn fresh basil off the heat.

Finish with a handful of fresh basil off the heat so its aroma stays bright and fresh.

Cooking each vegetable separately at first, then combining them, keeps every piece distinct and prevents the whole pot from turning to mush.
