Shish Tawook

Shish tawook are tender Lebanese grilled chicken skewers marinated in garlic, lemon, and yogurt. The tangy marinade keeps the chicken incredibly juicy and full of flavor. Serve them with garlic sauce, flatbread, and pickles for an authentic experience.

Ingredients

  • 800 g chicken breast, cubed
  • 1/2 cup plain yogurt
  • 6 cloves garlic, minced
  • 1 lemon, juiced
  • 1 tbsp tomato paste
  • 1 tsp paprika
  • 3 tbsp olive oil

Instructions

  1. Whisk the yogurt, garlic, lemon juice, tomato paste, paprika, oil, and salt into a marinade.
  2. Coat the chicken cubes and marinate for at least 4 hours.
  3. Thread the chicken onto skewers.
  4. Preheat the grill to medium-high.
  5. Grill for 10 to 12 minutes, turning, until charred and cooked through.
  6. Rest briefly and serve with garlic sauce and flatbread.

Marinate for at least a few hours, or overnight, so the garlic and lemon flavor fully penetrates the meat.

The yogurt in the marinade tenderizes the chicken while its coating helps the surface char beautifully on the grill without drying out.
