Zucchini Fritters

Crispy golden zucchini fritters are a delicious way to use up summer squash. Light and savory, they make a great snack, side, or light lunch with a dollop of yogurt. They come together quickly with just a few ingredients.

Ingredients

  • 3 zucchini
  • 100 g flour
  • 1 egg
  • 60 g feta or parmesan
  • to taste garlic and herbs

Instructions

  1. Grate the zucchini, toss with salt, and let sit 10 minutes.
  2. Squeeze out all the water firmly with your hands or a towel.
  3. Mix the zucchini with flour, egg, cheese, garlic, and herbs into a thick batter.
  4. Heat oil in a pan over medium-high.
  5. Drop in spoonfuls and flatten slightly.
  6. Fry until deeply golden on both sides, about 3 minutes per side.
  7. Drain briefly and serve with a yogurt dip.

💡 Chef's tip

Fry in a hot pan and resist flipping until the underside is deeply golden and set, or they will break.

Salting the grated zucchini and squeezing out every bit of water is the single most important step, since wet zucchini makes soggy fritters that fall apart.
