Grilled Zucchini

Grilled zucchini is a fast, healthy side with smoky char and tender bite, ready in about 15 minutes. A light coat of oil and a hot grill are all it takes to bring out the vegetable natural sweetness. It pairs with almost any grilled main and works hot or at room temperature.

Ingredients

  • 3 medium zucchini
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • to taste salt and pepper
  • 1/2 lemon

Instructions

  1. Slice the zucchini lengthwise into planks about 1 cm thick.
  2. Brush both sides lightly with olive oil and sprinkle with garlic powder and pepper.
  3. Preheat the grill to medium-high, about 220C (425F).
  4. Grill the planks for 3 to 4 minutes per side until tender with clear char marks.
  5. Transfer to a plate and season with salt and a squeeze of lemon.
  6. Serve warm or at room temperature.

💡 Chef's tip

Salt the zucchini only after grilling; salting beforehand draws out water and makes it steam and go limp instead of charring.

Cutting the zucchini into long planks rather than rounds gives more surface contact with the grates for better char and means fewer pieces to flip or lose through the grill.
