Beef Chow Mein
Chow mein tosses chewy stir-fried noodles with tender beef and crisp vegetables in a savory sauce. It is a takeout favorite that is quicker to make at home than to order. High heat and a fast hand are all it takes.

Ingredients
- 250 g chow mein noodles
- 300 g beef strips
- 300 g mixed vegetables
- 2 tbsp each soy and oyster sauce
- 1 tbsp each garlic and ginger
Instructions
- Boil the noodles until just tender, drain, and toss with a little oil.
- Sear the beef strips in a very hot wok until browned, then remove.
- Stir-fry the garlic, ginger, and vegetables for 2 minutes.
- Add the noodles and let them sit a moment to crisp, then toss.
- Pour in the soy and oyster sauce and toss to coat.
- Return the beef and toss everything together over high heat.
- Finish with green onion and serve immediately.
💡 Chef's tip
Slice the beef thinly against the grain while it is partly frozen so it cooks in seconds and stays tender.
Spreading the boiled noodles in the hot pan and letting them sit undisturbed for a moment gives them the lightly crisped, toasty edges that define a good chow mein.
