Broccoli Cheese Rice Casserole

Broccoli cheese rice casserole is a creamy, cheesy vegetarian bake that works as a comforting side or a meatless main. Tender broccoli and fluffy rice are bound in a rich cheese sauce and baked until golden. It is an easy, kid-friendly dish everyone goes back to.

Ingredients

  • 4 cups broccoli florets
  • 3 cups cooked rice
  • 3 tbsp butter
  • 3 tbsp flour
  • 2 cups milk
  • 2 cups shredded cheddar
  • 1/2 onion, diced
  • 2 cloves garlic

Instructions

  1. Blanch the broccoli for 3 minutes, then drain.
  2. Melt the butter, saute the onion and garlic, then whisk in the flour.
  3. Slowly add the milk and simmer until thickened, then stir in most of the cheese.
  4. Fold in the cooked rice and broccoli.
  5. Transfer to a baking dish and top with the remaining cheese.
  6. Bake at 190C (375F) for 20 to 25 minutes until bubbly and golden, then serve.

💡 Chef's tip

Blanch the broccoli briefly first so it stays bright green and tender-crisp rather than overcooking in the bake.

Stirring most of the cheese into the sauce and saving some for the top gives both a creamy interior and a golden, bubbly cheese crust.
