Scalloped Potatoes

Scalloped potatoes are thin-sliced potatoes baked in a rich, creamy garlic sauce until tender and golden. Layer upon layer of soft potato and velvety cream make this the ultimate comfort side. It is a showstopping dish for holidays and Sunday dinners.

Ingredients

  • 1.2 kg potatoes, thinly sliced
  • 3 tbsp butter
  • 3 tbsp flour
  • 2 cups milk
  • 3 cloves garlic
  • 1.5 cups shredded cheese
  • 1 onion, thinly sliced

Instructions

  1. Melt the butter, saute the garlic, then whisk in the flour and cook 1 minute.
  2. Slowly whisk in the milk and simmer until thickened, then season.
  3. Layer half the potatoes and onion in a greased baking dish.
  4. Pour over half the sauce and half the cheese, then repeat the layers.
  5. Cover and bake at 190C (375F) for 40 minutes.
  6. Uncover and bake 25 to 30 minutes more until golden and the potatoes are tender.

💡 Chef's tip

Cover the dish for the first half of baking so the potatoes soften, then uncover to brown the top into a golden crust.

Slicing the potatoes thin and evenly, ideally with a mandoline, is what lets them cook through and soak up the cream uniformly for that melting texture.
