Cauliflower Mac and Cheese

Cauliflower mac and cheese swaps pasta for tender cauliflower in a rich, creamy cheese sauce. It delivers all the comfort of the classic with a fraction of the carbs. Baked until bubbly and golden, it is a satisfying low-carb side or main.

Ingredients

  • 1 large head cauliflower, florets
  • 1 cup heavy cream
  • 100 g cream cheese
  • 2 cups shredded cheddar
  • 2 tbsp butter
  • 1 tsp garlic powder
  • 1/2 tsp mustard powder

Instructions

  1. Blanch the cauliflower florets for 4 minutes, then drain very well.
  2. Warm the cream, cream cheese, and butter until smooth.
  3. Stir in most of the cheddar, garlic powder, and mustard powder until melted.
  4. Fold the cauliflower into the cheese sauce.
  5. Transfer to a baking dish and top with the remaining cheese.
  6. Bake at 200C (400F) for 20 minutes until bubbly and golden, then serve.

💡 Chef's tip

Cut the florets to an even size so they cook uniformly and hold their shape in the sauce.

Roasting or blanching the cauliflower and draining it well removes excess water, which is the key to a cheese sauce that stays thick and creamy rather than watery.
