Green Bean Casserole

Green bean casserole is a beloved holiday side of tender green beans in a creamy mushroom sauce topped with crispy fried onions. The contrast of the velvety sauce and crunchy topping is what makes it a Thanksgiving staple. This from-scratch version beats the canned classic.

Ingredients

  • 700 g green beans, trimmed
  • 250 g mushrooms, sliced
  • 3 tbsp butter
  • 3 tbsp flour
  • 1.5 cups milk
  • 1/2 cup chicken or vegetable broth
  • 1.5 cups crispy fried onions
  • 2 cloves garlic

Instructions

  1. Blanch the green beans in boiling water for 4 minutes, then drain.
  2. Saute the mushrooms and garlic in butter until browned.
  3. Stir in the flour and cook for 1 minute, then whisk in the milk and broth until thickened.
  4. Toss the green beans in the sauce and transfer to a baking dish.
  5. Bake at 190C (375F) for 15 minutes.
  6. Top with the crispy onions and bake 5 minutes more until golden, then serve.

💡 Chef's tip

Add the crispy onions only in the last few minutes of baking so they stay crunchy instead of going soggy in the sauce.

Making the mushroom sauce from scratch rather than using canned soup gives a fresher, richer flavor and lets you control the seasoning.
