Cauliflower Tacos

Cauliflower tacos are a flavor-packed plant-based taco filled with spiced, roasted cauliflower and fresh toppings. Roasting gives the cauliflower crisp, caramelized edges and a satisfying, meaty bite. Loaded into warm tortillas with slaw and a creamy sauce, they win over meat-eaters too.

Ingredients

  • 1 head cauliflower, florets
  • 3 tbsp olive oil
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 8 corn tortillas
  • to serve slaw and lime crema

Instructions

  1. Preheat the oven to 220C (425F).
  2. Toss the cauliflower florets with the oil, chili powder, cumin, paprika, and salt.
  3. Spread them in a single layer on a baking sheet.
  4. Roast for 25 minutes, turning once, until charred and tender.
  5. Warm the tortillas.
  6. Fill them with the roasted cauliflower, slaw, and a drizzle of lime crema, then serve.

💡 Chef's tip

Spread the florets in a single layer with space between them; crowding the pan steams them soft instead of roasting them crisp.
