Chicken Parmesan

Chicken Parmesan

Chicken Parmesan is a beloved Italian-American classic of crispy breaded chicken topped with marinara and melted mozzarella. The contrast of the crunchy crust, tangy sauce, and gooey cheese is irresistible. Serve it over pasta for a hearty, crowd-pleasing dinner.

Ingredients

  • 4 chicken breasts
  • 1/2 cup flour
  • 2 eggs
  • 1.5 cups breadcrumbs
  • 2 cups marinara sauce
  • 1.5 cups mozzarella, shredded
  • 1/2 cup grated Parmesan

Instructions

  1. Pound the chicken to an even thickness and season with salt and pepper.
  2. Set up a breading station of flour, beaten eggs, and breadcrumbs mixed with Parmesan.
  3. Dredge each piece in flour, then egg, then the breadcrumb mix.
  4. Pan-fry the chicken in oil until golden and crisp on both sides.
  5. Transfer to a baking dish, top each with marinara and mozzarella.
  6. Bake at 200C (400F) for 12 to 15 minutes until the cheese is bubbling and the chicken reaches 75C (165F).

💡 Chef's tip

Pound the chicken to an even thickness before breading; it cooks through evenly and stays juicy instead of drying out at the thin edges.

Baking the breaded chicken briefly before adding the sauce keeps the crust crisp, so it does not turn soggy under the marinara and cheese the way an all-in-one bake can.
