Beef Enchiladas

Beef enchiladas are corn tortillas rolled around seasoned beef, smothered in red enchilada sauce and melted cheese. Baked until bubbly, they are hearty, saucy, and full of bold Mexican flavor. Top them with your favorite garnishes for a satisfying family dinner.

Ingredients

  • 12 corn tortillas
  • 600 g ground beef
  • 1 onion, diced
  • 3 cups red enchilada sauce
  • 2.5 cups shredded cheese
  • 1 tsp cumin
  • 1 tbsp chili powder
  • 3 cloves garlic

Instructions

  1. Brown the ground beef with the onion and garlic, then stir in the cumin and chili powder.
  2. Warm the tortillas briefly so they are pliable.
  3. Spread a layer of enchilada sauce in a baking dish.
  4. Fill each tortilla with beef and some cheese, roll up, and place seam-side down in the dish.
  5. Pour the remaining sauce over the top and cover with the rest of the cheese.
  6. Bake at 190C (375F) for 20 to 25 minutes until bubbly, then garnish and serve.

💡 Chef's tip

Coat the bottom of the baking dish with sauce before adding the enchiladas so they do not stick and stay moist from below.

Warming and lightly frying the tortillas before filling them keeps them pliable and prevents them from cracking or turning to mush under the sauce.
