Meatloaf

Classic meatloaf is tender, juicy, and topped with a sweet and tangy glaze that caramelizes in the oven. It is the ultimate budget-friendly comfort food that feeds the whole family. Serve it with mashed potatoes for a true homestyle dinner.

Ingredients

  • 1 kg ground beef
  • 1 cup breadcrumbs
  • 1/2 cup milk
  • 1 egg
  • 1 onion, diced
  • 1/2 cup ketchup
  • 2 tbsp brown sugar
  • 1 tbsp Worcestershire sauce

Instructions

  1. Preheat the oven to 190C (375F) and soak the breadcrumbs in the milk.
  2. Mix the beef, soaked breadcrumbs, egg, onion, Worcestershire, salt, and pepper until just combined.
  3. Shape into a loaf on a lined baking sheet.
  4. Stir the ketchup and brown sugar into a glaze and spread half over the loaf.
  5. Bake for 40 minutes, then brush with the rest of the glaze.
  6. Bake 15 to 20 minutes more until it reaches 70C (160F), then rest 10 minutes and slice.

💡 Chef's tip

Bake the loaf free-form on a lined sheet rather than packed in a pan; this lets the surface brown and the fat drain instead of stewing the loaf.

A panade of breadcrumbs soaked in milk is the key to a moist meatloaf, because the starch traps moisture and keeps the ground beef from cooking up dense and dry.
