Ingredients
- 600 g sirloin steak, cubed
- 4 tbsp butter
- 5 cloves garlic, minced
- 2 tbsp fresh parsley
- 1 tbsp olive oil
- to taste salt and pepper
Instructions
- Pat the steak cubes dry and season well with salt and pepper.
- Heat the oil in a skillet until almost smoking.
- Sear the steak in a single layer, in batches, until browned on all sides.
- Reduce the heat and add the butter and garlic.
- Toss the steak in the garlic butter for 1 minute off the heat.
- Sprinkle with parsley and serve.
💡 Chef's tip
Add the garlic and butter at the end off the heat; the residual warmth infuses the butter without burning the garlic.
Searing the steak cubes in a single layer over high heat is essential, giving each piece a deep brown crust instead of steaming them gray in a crowded pan.
