Instant Pot Red Lentil Curry

A creamy, comforting one-pot curry that goes from pantry to bowl in half an hour - no soaking needed.

Ingredients

  • 250 g red lentils
  • 400 ml coconut milk
  • 1 onion, diced
  • 2 tbsp curry powder
  • 500 ml vegetable broth

Instructions

  1. Saute onion on the Instant Pot Saute setting for 3 minutes.
  2. Add lentils, curry powder, broth and coconut milk.
  3. Pressure cook on High for 8 minutes, then natural release 5 minutes.
  4. Stir, season and finish with lime.

💡 Chef's tip

Stir in a squeeze of lime at the very end - the acidity lifts the whole pot and balances the coconut.

Red lentils need no pre-soak and cook to a soft, saucy texture under pressure, which is why they beat brown lentils for a quick weeknight curry.
