Instant Pot Red Lentil Curry

Ingredients
- 250 g red lentils
- 400 ml coconut milk
- 1 onion, diced
- 2 tbsp curry powder
- 500 ml vegetable broth
Instructions
- Saute onion on the Instant Pot Saute setting for 3 minutes.
- Add lentils, curry powder, broth and coconut milk.
- Pressure cook on High for 8 minutes, then natural release 5 minutes.
- Stir, season and finish with lime.
💡 Chef's tip
Stir in a squeeze of lime at the very end - the acidity lifts the whole pot and balances the coconut.
Red lentils need no pre-soak and cook to a soft, saucy texture under pressure, which is why they beat brown lentils for a quick weeknight curry.
