Potstickers are pan-fried dumplings with a crispy golden bottom and juicy pork filling. The contrast of the crackly seared base and tender steamed top makes them irresistible. Serve them with a soy-vinegar dipping sauce for a favorite appetizer or meal.

Ingredients
- 30 dumpling wrappers
- 400 g ground pork
- 2 cups cabbage, finely chopped
- 4 green onions
- 2 tbsp soy sauce
- 1 tbsp sesame oil
- 1 tbsp ginger, grated
- 3 cloves garlic
Instructions
- Mix the pork, cabbage, green onions, soy sauce, sesame oil, ginger, and garlic into a filling.
- Place a spoonful in each wrapper, wet the edges, and pleat to seal.
- Heat oil in a pan and place the potstickers flat-side down until the bottoms are golden.
- Add a splash of water and immediately cover to steam for 5 to 6 minutes.
- Uncover and cook until the water evaporates and the bottoms re-crisp.
- Serve with a soy-vinegar dipping sauce.
💡 Chef's tip
Do not overfill the wrappers and seal the edges well; a tight seal keeps the juicy filling in and prevents them from bursting.
The fry-then-steam method is the secret: searing crisps the bottom, then adding water and covering steams the dumplings through, giving both textures in one pan.
