Ingredients
- 2.75 cups flour
- 1 cup butter, softened
- 1.5 cups sugar
- 1 egg
- 1 tsp baking powder
- 1.5 tsp vanilla extract
Instructions
- Cream the butter and sugar until light and fluffy.
- Beat in the egg and vanilla.
- Mix in the flour, baking powder, and a pinch of salt to form a dough.
- Chill the dough for 30 minutes, then roll out and cut into shapes.
- Place on a lined sheet and bake at 175C (350F) for 8 to 10 minutes until just set.
- Cool completely before decorating with icing.
💡 Chef's tip
Roll the dough to an even thickness so all the cookies bake at the same rate without thin edges burning.
Chilling the dough before rolling and cutting is essential, because cold dough holds its shape in the oven so the cookies do not spread and lose their crisp edges.
