Caramel Apples
Caramel apples are crisp, tart apples coated in a glossy, buttery homemade caramel. A fall and Halloween favorite, they are as fun to make as they are to eat. Roll them in nuts or sprinkles for a festive, crowd-pleasing treat.

Ingredients
- 6 apples
- 1 cup sugar
- 1/2 cup butter
- 1 cup heavy cream
- 1/2 cup corn syrup
- 1 tsp vanilla extract
- optional toppings (nuts, sprinkles)
Instructions
- Scrub, dry, and chill the apples, then insert a stick into each.
- Combine the sugar, butter, cream, and corn syrup in a heavy pot.
- Cook, stirring, until the caramel reaches 118C (245F).
- Stir in the vanilla and let the caramel cool slightly.
- Dip and swirl each apple to coat, letting the excess drip off.
- Roll in toppings and set on parchment to cool until firm.
💡 Chef's tip
Scrub and dry the apples well and chill them first; the wax coating and warmth otherwise stop the caramel from sticking.
Cooking the caramel to the correct temperature is the key: too soft and it slides off the apples, too hard and it becomes impossible to bite.
