Ingredients
- 2 cups sugar
- 1/2 cup butter
- 1/2 cup milk
- 1/4 cup cocoa powder
- 1/2 cup peanut butter
- 3 cups rolled oats
- 1 tsp vanilla extract
Instructions
- Combine the sugar, butter, milk, and cocoa in a saucepan.
- Bring to a rolling boil and boil for exactly 1 minute, then remove from the heat.
- Stir in the peanut butter and vanilla until smooth.
- Quickly fold in the oats until fully coated.
- Drop spoonfuls onto parchment paper.
- Let them set at room temperature until firm, then serve.
💡 Chef's tip
Drop the cookies onto parchment quickly once mixed, as the mixture begins to set the moment the oats go in.
Boiling the sugar mixture for exactly the right time is the make-or-break step: too short and the cookies stay gooey, too long and they turn dry and crumbly.
