Oatmeal Raisin Cookies

Ingredients

  • 3 cups rolled oats
  • 1.5 cups flour
  • 1 cup butter, softened
  • 1 cup brown sugar
  • 2 eggs
  • 1 cup raisins
  • 1.5 tsp cinnamon
  • 1 tsp baking soda

Instructions

  1. Cream the butter and brown sugar until fluffy.
  2. Beat in the eggs and a splash of vanilla.
  3. Mix in the flour, baking soda, cinnamon, and salt.
  4. Stir in the oats and soaked raisins.
  5. Drop spoonfuls onto a lined baking sheet.
  6. Bake at 175C (350F) for 11 to 13 minutes until the edges are set, then cool.

Soak the raisins in warm water for 10 minutes before adding them; plump, hydrated raisins stay soft instead of turning hard in the oven.
