Ingredients
- 400 g firm tofu
- 2 tbsp cornstarch
- 3 tbsp soy sauce
- 2 tbsp each mirin and sugar
- 1 tsp each garlic and ginger
Instructions
- Press the tofu for 15 minutes, then cut into cubes.
- Toss the cubes in cornstarch to coat lightly.
- Air fry at 200C (400F) for 14 to 16 minutes, shaking, until crisp and golden.
- Simmer the soy sauce, mirin, sugar, garlic, and ginger into a thick glaze.
- Toss the crispy tofu in the warm glaze off the heat.
- Serve over rice with sesame seeds and green onion.

Toss the tofu in the warm glaze only at the end, off the heat, so it stays crisp rather than going soft.
Coating the pressed tofu in cornstarch before air frying creates a crackly shell that soaks up the glaze while staying crisp.
