Instant Pot Mashed Potatoes

Instant Pot mashed potatoes are impossibly creamy and ready in about 20 minutes with no draining required. Cooking the potatoes in just enough liquid means all the starch and flavor stay in the pot. They are the easiest holiday-worthy side you will ever make.

Ingredients

  • 1 kg russet potatoes, chunked
  • 1 cup chicken or vegetable broth
  • 4 tbsp butter
  • 1/2 cup warm milk
  • 2 cloves garlic, minced
  • to taste salt and pepper

Instructions

  1. Add the potato chunks, broth, and garlic to the Instant Pot.
  2. Seal the lid and pressure cook on high for 8 minutes.
  3. Quick-release the pressure once cooking finishes.
  4. Add the butter and mash the potatoes right in the pot with the cooking liquid.
  5. Pour in the warm milk gradually, mashing until creamy.
  6. Season generously with salt and pepper and serve warm.

💡 Chef's tip

Warm the butter and milk before mixing them in; cold dairy seizes the starch and can make the potatoes gluey instead of silky.

Because the potatoes steam in a small amount of broth rather than boiling in lots of water, they never get waterlogged and mash up fluffier and more flavorful.
