Palak Paneer

Ingredients
- 400 g spinach
- 250 g paneer
- 1 each onion and tomato
- 1 tbsp each garlic and ginger
- 1 tbsp garam masala
Instructions
- Blanch the spinach for 1 minute, then transfer to cold water to keep it bright green.
- Blend the cooled spinach into a smooth puree and set aside.
- Pan-fry the paneer cubes in a little oil until lightly golden, then remove.
- Saute onion, garlic, and ginger until soft, then add chopped tomato and the spices.
- Cook until the mixture turns into a thick fragrant base.
- Stir in the spinach puree and a splash of water and simmer 5 minutes.
- Fold in the paneer and a spoon of cream, then warm through.
- Serve hot with naan or rice.

Lightly pan-fry the paneer cubes before adding them so they hold their shape and pick up a golden edge in the sauce.
Blanching the spinach briefly and then shocking it in cold water locks in the bright green color, so the sauce stays vivid instead of turning a dull army green.
