Reuben Sandwich

The Reuben is a grilled deli classic of corned beef, Swiss cheese, sauerkraut, and Russian dressing on rye bread. Buttery, tangy, and melty, it is a hearty, satisfying sandwich. Griddled until crisp and golden, it is deli comfort at its best.

Ingredients

  • 4 slices rye bread
  • 300 g corned beef, sliced
  • 4 slices Swiss cheese
  • 1 cup sauerkraut, drained
  • 1/4 cup Russian or Thousand Island dressing
  • 2 tbsp butter

Instructions

  1. Spread dressing on the rye slices.
  2. Layer Swiss cheese, warmed corned beef, drained sauerkraut, and more cheese.
  3. Close the sandwiches and butter the outsides.
  4. Griddle over medium-low heat until the bottom is golden.
  5. Flip and cook until the second side is crisp and the cheese melts.
  6. Slice and serve hot.

Griddle it low and slow like a grilled cheese so the cheese fully melts and the corned beef warms through before the rye burns.

Draining and drying the sauerkraut well before assembling is the key to a Reuben that grills up crisp instead of soggy from excess moisture.
