Ingredients
- 4 slices rye bread
- 300 g corned beef, sliced
- 4 slices Swiss cheese
- 1 cup sauerkraut, drained
- 1/4 cup Russian or Thousand Island dressing
- 2 tbsp butter
Instructions
- Spread dressing on the rye slices.
- Layer Swiss cheese, warmed corned beef, drained sauerkraut, and more cheese.
- Close the sandwiches and butter the outsides.
- Griddle over medium-low heat until the bottom is golden.
- Flip and cook until the second side is crisp and the cheese melts.
- Slice and serve hot.
💡 Chef's tip
Griddle it low and slow like a grilled cheese so the cheese fully melts and the corned beef warms through before the rye burns.
Draining and drying the sauerkraut well before assembling is the key to a Reuben that grills up crisp instead of soggy from excess moisture.
